I love Sausage Casserole, its comfort food, there is no other word for it. When you come home on a freezing cold night it instantly warms you up. Its brilliant to share with the family at the dinner table and if you don’t want to brown the sausages off first you can cook it all in one pot! A one pot wonder. Best of all you can prepare this dish first thing in the morning, taking mins out of your day and come home to a beautifully cooked meal.
6-8 rashers of bacon with fat cut off
tin chopped tomatoes
3 tbsp tomato purée
300ml chicken stock
1-2 tsp paprika
1-2 tsp garlic powder
1 tsp mixed herbs
splash of Worcester sauce
1 Yellow pepper
- cook sausages and bacon before adding to the slow cooker (i cooked mine the night before as wanted all ready to put in the slow cooker in the morning before going out)
- Chop onion, leek and add to bottom of slow cooker
- Add bacon and sausages
- Mix tin tomatoes with stock, puree, paprika, garlic and mixed herbs and add to slow cooker
- About 30mins before serving I added a chopped up yellow pepper,
I cooked mine on low for 8 hours.
